Good morning! First day in Chiang Mai was pretty fun and educational!! Everyone says you can’t go to Thailand without taking a cooking class. A Thai cooking class in Chiang Mai is a popular thing to do to not only learn how to cook their classic dishes, but also their culture.
In Chiang Mai, my boyfriend introduced me to one of his SD friends who recently moved to Thailand to teach. Since I was visiting Thailand, we corresponded via online to meet up in Thailand. When in thailand, learn to cook their foods and meet a new friend yesss?!!?
But first, let me get to my first meal in Chiang Mai after landing.
After we landed, we walked around aimlessly and stumbled upon some local Thai restaurants a few blocks from our hotel. It was a sit down that had a roof but no walls. Open to the public via one side.
Got ourselves from fresh coconut juice and Thai tea. I realized I’m thailand, they call their Thai tea “iced milk tea.” There’s no boba here.. π
I feel like everywhere I go, I get chicken and tofu pad Thai. π When in Thailand right??!
So I heard that their most famous dish in Chiang Mai is there curry chicken noodle soup or also called Khao soi gai. It’s like a creamy, milky, coconut-y curry soup with egg noodles and crispy wonton strips on top.

Their fried pork belly is actually just fried pork strips. Like bacon..

And now let’s talk about the exciting part: the Thai cooking class!!!! YAY!!!!
We were blessed to have wonderful, funny, goofy and outgoing people in our cooking class! So here is the table all set up neatly. Each person gets their own apron.
This will be our main cooking station where after we prep and chop up our ingredients, we bring them over to our personal kitchen station to fry, cook or boil!!

So our first dish that we decided to make was chicken coconut milk soup. We prepped all of the ingredients in the earlier picture and boiled everything in a pot with coconut milk and water!
Next we made pad Thai. I never realized pad thai was so easy to make! We basically cut and prepped all of the ingredients and pan fried them in a wok with coconut milk and water.
Here is my personal dish of pad Thai!!! Everyone’s tasted different but I personally loved mine because I added extra shrimp paste. I think that’s the key secret! π
One of the appetizers we chose to make was fried banana rolls. Ive never had these before and I so I decided to try something new! I heard they’re called money makers. The rolls were super easy to make. Just put chopped banana pieces in a wonton sheet and roll it up with an egg and fry!

We start to make mango sticky rice first because we need time for it to sit and thicken while we make our main entree. It’s called multi tasking and being efficient.
Yummmmmm. I admit mine wasn’t as good as the restaurants. In our class, she taught us to cook the rice with the coconut milk. But at restaurants it’s just coconut milk on top of sticky rice. With sesame seeds!!!! Wow everything about Thai food revolves around coconut milk!

We grounded up a lot of ingredients to make a fine red chili paste. We will add that to the pumpkins and chicken.
It’s funny how we use a wok to make coconut curry. After many rounds of water and coconut milk to cook the pumpkin through…
We made it!
And we got certified! Yay for becoming a Thai housewife material?! Haha π
I loved that on the very first day of the new year, I took a cooking class to learn how to make Thai food. It feels good! And I made a new friend π
