Even 3 years later, Menya Ultra is still my favorite #1 go-to Japanese ramen spot in America. Yes, I still choose it over Momofuku’s and Tsujita’s and Ramen Santouku and much more.. It is just sooo good! What makes it so good? The broth.. The pork based broth that is the most milky, creamy, fatty broth you can ever slurp.. I will never tire of it.. And I will always wait to go back to San Diego to slurp Menya Ultra over settling for a ramen bowl in LA.
Now usually there is a 2-3 hour wait to eat here. But thankfully, because of Corona virus, they now offer take-out!!! One of their take-out options is the Tonkotsu Family Pack, which includes 4 servings of fresh, raw noodles and unheated broth and toppings. You put it together at home.. You cook the noodles at home.. You re-heat the broth at home.. So that you can still get that freshly “made” bowl of ramen at home!!
>> I personally don’t like that the noodles will stick and harden from take-out because it’s been boiled & cooked and clumped together for 15+ minutes.

Now there are two other types of family packs .. Because they now serve a variety of ramen bowls. BUT TRUST ME.. You only want to try and eat the classic Tonkotsu ramen with Chasu.. Trust! That is what they’re originally KNOWN & FAMOUS FOR! Don’t eat the others.. I mean they’re still good.. but not a heart turner like the tonkotsu!

Now their soft boiled egg is STILL soft-boiled inside when you finally bite into it.. Now how great is that?!

Tip: Make sure you heat up the broth slowly to a simmer and then turn it off. Heating the broth up to a boil will quickly evaporate the water and condense the broth even more >> Hence, making it even more salty!! It’s perfect the way it is when not overheated and not over salty.
Also!! Don’t be deterred by how thick the cold broth looks initially! It will quickly melt into this smooth & creamy broth mixture that is a decadent to drink from.. 😉

And tastes just as delicious as even dining at the restaurant!! The broth is creamy, silky and smooth. Decadent with pork flavor and fat. The soft boiled egg is still soft and the yolk inside is still medium rare. The mushrooms are crunchy. The green onions are a delight!
This Family pack dinner portion is at least a few bucks cheaper per person compared to dining in or dining out. (Probably because you still have to cook the noodles yourself). And because it still tastes just as good but now in the comfort of my own home, I will opt to more family pack take-outs from now on!
