Dark Chocolate Chip Banana Protein Pancakes

Instructions
  1. First, peel the bananas and break them off into small chunks in a mixing bowl. Smash the banana bits with a fork (or whatever weapon you desire ;)) until they turn into a mushy consistency.
  2. Next, crack the raw eggs into the mashed bananas. Mix well with the fork. After the eggs have mixed well with the mashed bananas, add in that scoop of chocolate protein powder! Mix well.
  3. Heat the griddle (or frying pan) over medium heat and add a tsp of extra virgin olive oil. Once warm, scoop up 2 tbsp of your pancake batter onto the frying pan. You can finally sprinkle some dark chocolate chips on!
  4. Cook for 1-2 minutes (or until the bottom edge of your pancake batter turn into a light, golden brown). Flip and cook for another 1-2 minutes.
  5. And there ya go! Transfer your finished product onto a serving plate. Drizzle honey over your tower of pancakes if you choose to!
Recipe Notes
  • this recipe is designed for SMALL pancakes [that’s why I suggested 2 tbsp of pancake batter when you scoop it into the frying pan! My suggestion is to use a 1 tbsp measuring spoon when scooping it! Easier to control and count with 🙂
  • use a spatula when “flipping” these pancakes!
