Do you ever find yourself cooking a fantastic meal for yourself or family and wound up with a ton of leftovers?? I always find myself in that predicament and in a busy, fast-pace world that includes meal prepping and trying to eat healthy, I wanted to find something to do with leftovers that would still be healthy to eat, be fast to cook, and still be delicious. I found a recipe that fits all 3 criteria!
With my busy schedule of school and work everyday (on top of yoga, gym and climb), where can I squeeze in time to cook?? Well, this recipe only takes 20 minutes and all of the ingredients (including the leftovers), should already be in your kitchen!! They’re called salmon cakes! Kind of like crab cakes 🙂
I decided to make salmon cakes this past weekend because my boyfriend and I wanted to bake salmon for dinner on Friday. We wounded up with baking a lot of salmon! Which means tons of leftovers!!! Now I never mind eating the same thing twice, but sometimes a little different twist can transfer leftovers into something beautifully delicious!
This recipe only requires 5 things: leftover salmon, 1 egg, salt, pepper, and olive oil. Wow, that easy. The meal prep and the cooking time is even easier!!
Furthermore, this is ALL HEALTHY!!! Salmon is good for you. You need some salt in your life. Pepper is good for you too. And extra virgin olive oil!! (Now if you’re going through a ketogenic diet and because this recipe is already practically carb-less, replace the olive oil with some fatty butter to cook with).

Healthy Benefits of Eating Salmon 🙂

- 1 can pink salmon (or leftover salmon)
- 1 egg
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon extra virgin olive oil
Ingredients

- Drain the salmon into a mixing bowl (if using canned salmon). Remove any bones and skin from the salmon. Add the egg, salt and black pepper to the salmon. Mix with your hands (time to get a little messy)!
- Form baby salmon cakes with hands into even baby circles (like in the picture) in any size you desire! (Remember, the smaller the salmon cakes, the faster they take to cook later on the pan).
- Add extra-virgin olive oil to the pan and heat over medium-heat. (If you want to turn this recipe into a ketogenic meal, use butter instead of olive oil). Add the formed salmon cakes into the skillet and watch it sizzle!! Cook on each size for 5-7 minutes or until golden brown.
- Use a spatula to transfer the cooked salmon cakes over to a pretty setting. (I added rosemary for decoration).
